With Summer in the rearview mirror and temperatures dropping, Fall is well and truly upon us. Fall brings with it shorter days, chillier nights, and an abundance of incredible seasonal ingredients. From our kitchens to yours, here are some of our team members’ go to dishes perfect for cozy evenings at home. 

 

Delicious Dinners, Savory Salads & Stews:

 

This loaded pasta with butternut squash, spinach and sausage is one of Marketing Manager Jennifer Hamilton’s favorite seasonal meals. A filling and comforting entree, the butternut squash lends this pasta a creaminess that will have you forgetting there’s no actual cream in the ingredients list.

 

Contracts and Events Manager Beth Ford suggests a hearty helping of pork and tomatillo stew to warm up on a cold fall night. Combining fresh and savory flavors, this dish incorporates dark beer into the mix– but be careful to sneak a few sips only after all the chopping and dicing is out of the way!

 

For those looking to truly appreciate Fall’s bounty, Senior Event Services Specialist Michelle Schiowitz says it’s hard to go wrong with this colorful pomegranate and pear salad. Featuring pecans, apples, and pears alongside creamy goat cheese and pomegranate arils, this healthy, crunchy mix also delivers a tart kick with a vinegar and ginger dressing.

 

Speaker Liaison Cara Tracy recommends this flavorful one-pot quinoa with apples and walnuts. To take it up a notch, she suggests adding in an apple and sage vegetarian sausage for a little extra substance, which can turn it from a side to main dish.

 

Executive VP Ken Sterling loves a helping of slightly spicy bucatini all’Amatriciana to warm up on a Fall night. Featuring thinly-sliced pancetta, this recipe allows for plenty of substitutions if that can’t be had.

Needing only 10 minutes of prep time and making use of yellow cake mix, pumpkin poke cake epitomizes fall flavors (and is definitely going on my to-bake list this season!).

 

Marketing and Inbound Associate Sophie Sterling churns out this easy buttery French apple cake dozens of times a year. Simple and not too sweet, this homey dessert is delicious with a dollop of whipped cream or a little scoop of vanilla ice cream.
